Fruit and Veggie Bonus

WOW this bonus challenge is great! okay maybe not So great :)
I have never been much of a veggie eater. I love stuff fresh from the garden but since everything is frozen, that option is out!  What are some good ways to get all those extra veggies in, without slipping them under the table to the dog??

  1. Today I ate a lot of orange things - carrots, oranges, pumpkin. With 8 servings of fruit/veg, there really is no room for anything else!

    Sometimes during the last challenge I would get desperate and eat a pickle at 8:45 for my last vegetable. Also, salsa is good in/on a breakfast or veggie burrito, with chips, or in any Mexican-style dish.

  2. try a combination of cooked and fresh veggies for every meal. A lot of casseroles and dishes have a veggies and meat. I add a litlle less meat and a little more vegies to each dinner.
    I'm traveling back to Idaho today and my ice chest is packed with vegies. There won't be any room in my tummy for crackers and other travel food. What a great concept.

  3. Smoothies are a great way to fit a couple of servings of fruits (and veg if you're brave) in the morning.

    Here's what I've been doing and it's working better than expected. When I wake up I usually have an apple & an orange right away, then get my workout in. After the workout, I make breakfast and throw some peaches on my oatmeal or salsa on my eggs. If I have 100% juice or smoothie that # goes up! Potentially 5/8 fruits/veg before noon! Then at lunch I add a salad or raw veg and I'm up to 6/8. Generally dinner has always included 2 sides of veg, so it's not too terribly difficult to squeeze in a couple more for 8/8. Even if it's just 1 veg at dinner I still have an afternoon or evening snack that could be a favorite veg. I thought this was going to be harder, but I think the biggest change for me is switching my pre-workout snack from a bread-type carbs to fruit carbs. It just starts my day with a better focus.

    Also, after all the heavy sides and calorie laden foods from Christmas, it feels really good to cleanse the body with all the fruits and veggies our bodies need. Not to mention the WATER we are packing away everyday. Okay, I'm done writing my book now. ;)

  4. oh! Another thing I do is make Veggie Beef Soup using V8 as my soup base. The cup of broth = 1 veg not including all the veggies I pack into that broth. When I'm busy or traveling a lot I've found V8 Fusion to be helpful, too. (I can't handle regular V8 alone) It's a full serving of fruit and a full serving of vegetable per can. A little pricey so it's not something I use very often, besides the fact that I prefer my fruits/veg to be whole when I start working with them.
